Application of High Acyl Gellan Gum:
1.High acyl gellan gum has a unique soft and elastic gelling property, it can be used in jelly, jam, dairy-based pudding,coffee milk, drinks and desserts.
2. High acyl gellan gum has thickening and stabilizing effects. At low concentrations high acyl gellan gum has good rheological properties and it can play a good suspending effect. It can be used in beverages (especially suspended-pulp drinks, cocoa powder), dairy products, ice cream and fillings.
3. The high acyl gellan gum has super advantages in dairy products comparing with other colloids: It has compatibility with casein, low reactivity, it will not form a wall hanging effect like low acyl gellan gum, and it does not have protein precipitation like xanthan gum; it has low dosage, good structural recovery properties. Therefore, it has excellent application characteristics in yogurt.
4.High acyl gellan gum has adhesiveness and it can be used in frosting and icing;
5.High acyl gellan gum has strong water retention capacity and it can be used in cakes and cheeses to achieve moisturizing, fresh-keeping and shape-preserving effects.
