Xanthan Gum
Xanthan gum is a high-molecular-weight anionic polysaccharide polymer produced from starch through fermentation by Xanthomonas campestris. Xanthan gum can be made from corn starch and possesses a unique molecular structure that gives it numerous properties suitable for a wide range of applications. It can be used as a rheology modifier in aqueous systems, a stabilizer for emulsions and suspensions, and an emulsifier. Its numerous applications cover a broad market, ranging from the food industry to oil drilling.
